SHORTBREAD (CITRUS, VANILLA OR ALMOND)

Preheat oven to 350 degrees. Sift the flour, cornstarch, confectioner’s sugar, and salt. Cream butter until light and fluffy. Add zest or flavoring. Add dry ingredients blend well. Portion into logs about a quarter size in diameter. Wrap parchment paper around the log and place into freezer until firm. Once firm, cut into quarter inch pieces and place on a cookie sheet. Bake at 350 degrees approximately 5-6 minutes.
