GRILLED VEGETABLE PASTA SALAD WITH FETA AND BALSAMIC VINAIGRETTE
Marinate a mix of vegetables in your favorite bottled vinaigrette. Zuchini, yellow squash, green beans, tomatoes, asparagus, onion, garlic all work well. Grill until crisp tender, cook, then chop. Add to cooked penne pasta, toss with feta cheese, balsamic vinaigrette, fresh basil, salt and pepper to taste.
