EGGS FLORENTINE
Bring water to a boil, add a dash of vinegar.Crack egg into water one at a time. While eggs are cooking, sauté spinach, toast English muffin and grill ham. Place muffin on plate. Place ham on muffin, then spinach. Place poached egg on spinach. Top with hollandaise sauce, garnish with cheese.
