PARADISE BEACH TUNA
Take tuna steak from refrigerator ½ hour before prep begins. Heat a large cast iron skillet until white hot. Rub tuna with olive oil, then with blackening seasoning until coated evenly. Carefully place tuna in a skillet and sear on both sides and all four edges about 30 seconds each. Let tuna sit for at least 2 minutes before slicing. In a large mixing bowl, add remaining ingredients, excluding green onion. Best if fruit salsa can be prepared 2-4 hours before needed. To serve, cut the tuna on a diagonal, place fruit salsa in the center of a serving dish. Stand tuna on edge against the salsa. Garnish with green onion.
