BEACH STYLE SHRIMP

Butterfly the shrimp slightly deeper than usual. Parcook the bacon in a sauté pan. Cut each bacon slice into halves and drain on paper towels. Place one chunk of cheese in the center of each shrimp and wrap with bacon. Thread six shrimp on each of six metal skewers. Saute the shrimp in batches in a hot sauté pan until caramelized on both sides, turning once. Arrange the skewers in a single layer on a baking pan and drizzle with barbeque sauce. Bake at 350 degrees in a gas oven until cooked through, serve with dirty rice and wilted spinach. Serves 4
