Grilled Ciabatta Panzanella Salad
Drain the tomatoes in a sieve to remove excess liquid while preparing remaining ingredients. Cut bread lengthwise and spread with olive oil. Put tomatoes, bread, bacon and calamari on a hot gas grill. After cooking, chop bacon, cut bread into croutons and cut tomatoes into quarters. Chop calamari into bite sized pieces. In a bowl, combine the tomatoes, onion, garlic, olive oil, lemon juice, basil, tarragon, salt and pepper. Add the croutons and toss well. Add remaining ingredients and toss well. Divide tomato mixture among 4 plates. With a vegetable peeler, shave the parmesan cheese over the salad. Sprinkle fresh chopped Italian parsley over the plate. Serve immediately.
