MEDITERRANEAN MARINATED SHRIMP
Whisk all ingredients together in a bowl.
To marinade, add one medium red onion, sliced into rings 2lbs. cooked and peeled shrimp 3 diced Roma tomatoes, and 1 cup quartered artichoke hearts. Let shrimp and vegetable mixture marinate for at least one hour in refrigerator. Serve over salad greens with vegetables as garnish.
